Memere's Cocoa Mayonaise Cake

This is from our resident Memere (you know... the lady in the neighborhood whom every kid calls "Memere", but if you asked her first name, they'd stare at you blankly and say "It's Memere!")  Love her to death...And her cooking too!!

Cocoa Mayonaise Cake

Combine in mixing bowl of electric mixer:

1 and 3/4 c. unsifted flour
1 c. sugar
1/3 c. Hershey's cocoa
1 and 1/2 ts. baking powder
1 and 1/2 ts. baking soda
1/2 ts. salt

Add, then beat 3 minutes at medium speed:
1 c. mayonaise
1 c. water
2 ts. vanilla

Pour batter into a greased and flour tube pan (I've used other types of pans, bundt, round cake pans, etc, and its turned out fine!) Bake at 350F for 40-45 minutes.

This is a super rich chocolate cake, I was telling Dawn that it's like the inside of a chocolate glazed doughnut!  Yummy!  It's great paired up with this marshmallow buttercream frosting (I've made it for several birthday celebrations:)

  2. I've always used AP flour (its what I normally have on hand...)This cake is very versatile and baker friendly! That's part of the reason I like it so much:)

  3. I've got that cake in the oven now..can't wait to try it. I'm not going to use frosting yet. I want to eat it naked, so to speak. Then I can pair it with a frosting.

    Here's a good carrot cake recipe I use, courtesy of Good ol' Betty Crocker:

    1 1/2 cups sugar
    1 cup vegetable oil
    3 large eggs
    2 cups all purpose flour
    1 1/2 tsps ground cinnamon
    1 tsp baking soda
    1 tsp vanilla
    1/2 tsp salt
    1/4 tsp ground nutmeg
    3 cups shredded carrots
    1 cup coarsely chopped nuts (optional)

    Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, lightly flour

    Mix sugar, oil and eggs in large bowl until blended; beat 1 minute. Stir in remaining ingredients except carrots and nuts. beat 1 minute. Stir in carrots and nuts(optional). Pour into pan.

    Bake rectangular pan 40-45 mins. Round pans 30-35 mins or until toothpick inserted in center comes out clean. Cool in pan on wire rack.

    Frost with cream cheese frosting.
